My name is Michael Goolsby. I am 34 years old. My husband and I are celebrating 15 years this August. We have a beautiful 8 year old son. I was fortunate to stay home with our son for the first 1 1/2 of his life. During this time I was introduced to the world of "caking". I stumbled on a TLC cake show and I was sucked in! I took a few Wilton classes, bought some books and watched many of Sharon's videos. I was baking about 3 cakes a week just to practice. Here I am 8 years later still trying to learn.
I enjoy "caking", it gives me a creative outlet. I hope one day I can do this from home full time now that GA passed the food cottage law. I'm really excited about being a member here. Looking forward to all the new talent shown here. This is a picture of my family. I'm the one on the left.
Martha Stewart has some great cake recipes. Her strawberry and lemon recipes are ones I've made in the past that are very tasty!

Anyone that knows me knows that Christmas is my time of the year. I wanted to find a Apple Cake recipe and found one online some time ago. This is a great moist apple cake that is always a hit when I make it! I cannot take credit for it though. It is from Nancy’s Kitchen.com
Christmas Apple Cake:
1 c. butter, softened
2 c. sugar
4 eggs
3/4 c. grated, peeled apples
1/2 c. rum
3 tsp. pumpkin pie spice
1/2 tsp. salt
1 tsp. vanilla
3/4 c. boiling water
1 c. raisins
3 c. flour
1 tsp. soda
2 c. chopped walnuts
Beat together butter and sugar until fluffy. Add eggs, beating after each egg. Add apples, rum, pumpkin pie spice, salt, and vanilla. Beat well. Pour boiling water over raisins and let set. Mix in flour and soda. Add raisins and juice. Add walnuts. Bake in 10"x15" pan or in muffin tins. Bake at 350 degrees for 35 to 50 minutes depending upon size of pan. Makes several small cakes for gifts and stays moist and rich.
