Hello, sugar friends! Hailing from beautiful Highlands Ranch, Colorado, I had always had a small undiscovered interest in sugar arts. Life took me to become a hairstylist, however, and on to grow a family of four beautiful little ones and to earn my taekwondo black belt. In December 2012 I received a cupcake decorating kit as a gift, discovered the world of YouTube video tutorials and the rest, as they say, is history!

However, too nervous to attempt cakes for quite some time, I delved into sugar cookie decorating with a passion. After turning down many a cake order yet secretly taking online classes and watching loads of video tutorials, I finally officially accepted my first cake order in August 2014… and was hooked. for. life!
 
Sugar arts brings me so much joy, from the goosebumps at the amazing moment your plan is conceived to the baking and icing (creating your canvas), to the main decorating and the small finishing details that wow, and finally to the joy on your client’s face when they see your masterpiece. My wonderful, supportive husband has been there every step of the way, and is often my biggest problem-solving help, as well as my “cute delivery boy”. My children are my harshest critics and bring the eye that only children possess, which sometimes keeps me grounded when I am too hard on myself. 
 
For now, life allows me only a couple of projects per week but I have big dreams for the future! When all of my littles move on to the school years, my Cassie’s Confections will move from a nap time and after bed time activity to, hopefully, a career! Sugar has become one of my biggest passions, and being able to share it with the world makes it ever more fun!
 
 
Aunt Ellen’s Lemon Bars

Crust:
2 Cups Flour
1/2 Cup Powdered Sugar
1 Cup Butter (real butter only)

Melt butter in 13 x 9-inch pan. Mix flour and powdered sugar.  Pour into pan and
stir with butter.  Press firmly in pan.  Bake at 350 degrees for 20 minutes.

Filling:
4 Eggs                                 
4 Tbsp. fresh lemon juice
1/2 - 1 tsp. lemon zest {can substitute lime}
2 Cups Sugar
4 Tbsp. Flour
1 tsp. Baking Powder
1/2 tsp. Salt

Beat eggs and lemon juice.  Sift sugar, flour, baking powder & salt.  Add to beaten eggs. Pour over crust while hot and bake for 25 minutes at 350 degrees.  Sift powdered sugar over the top when cool. Cut into squares and enjoy.
