My name is Catherine "Cat" Miller. Even though I was born overseas we settled in Frederick,Md....which I consider home. I'm currently living in Danville, Ky ( about 30 miles outside of Lexington). I attended EKU's occupational therapy program and upon graduation I found out we were having our 2nd child and then our 3rd. I have 3 boys 2,3,and almost 10 yrs old. I'm a stay at home mom. I started Catty Cakes in Dec 2015. Although, I had been making cakes for awhile.
My goal is to have a little shop on our main street one day! With the hopes that at least one of my boys would take over one day. I love everything about decorating!!!!! I can't get enough of it. The only downside is that I can't buy everything I want at once lol. I'm so glad that I found SugarEd. It has been super helpful. The FB members and Sharon have always responded to my questions and are so supportive.
So this is a very simple recipe but it is one of my all time favs!!!!
Raspberry Jam Buttercream
1 cup unsalted butter, room temp
6-8 cups powder sugar
1/2 cup seedless raspberry jam (i like All Fruit brand)
Milk (optional)
Red food color (optional)
In a large bowl with paddle attachment cream jam and butter until well incorporated. Add 1 cup of sugar at a time until you reach desired consistency.
If too thick, thin out with milk.
Add food color to mix to intensify color.
Also, try this with strawberry jam.
NOTE: this recipe has a tendency to become very very rich and sweet, err on the side of caution when adding sugar. I also like to add extra raspberry flavoring.
